Our wines are the true expression of the land of Ribera del Duero. We respect, care and cherish the vineyards, as well as the terroir, the landscape or the life cycles of the grape. Only in this way, the vine offers its very best, expressing its exceptional terroir.

Vendimia

Grapes are picked by hand; clusters are selected carefully, being harvested during their optimal time. This is why each harvest is different and we adapt to Nature: She rules. This process, together with the human team in the Winery, presents us with the best Montegaredo and Pirámide wines.

During the annual cycle we carry out different crops to improve and regulate the health and strength of the vineyard.

Alcoholic fermentation

After the grapes arrive to the winery, clusters are fed into the destemmer, and immediately after, put into the tanks. These tanks, which are located in our semi-buried Pyramid , are equipped with a state-of-the-art temperature control system and this is where the alchemical process of the grapes begins to develop.

The fermentation is a process that lasts between 8 and 20 days and in which the grapes leave their best qualities. In this process of maceration of the grape with the skin (where the pigments, aromas and tannins are found), the polyphenols, which are responsible for the gorgeous colour of our wines.

Malolactic
fermentation

Once the wine is fermented, it undergoes a light pneumatic pressing. Then, the second fermentation takes place, where the malic acid will be transformed into lactic acid. Spontaneous malolactic fermentation that takes place in stainless steel tanks or casks.

Ageing

The next step is to pour the wine into our casks of American and French Oak, located in the crianza cellar, at the proper temperature and humidity. Depending on the type of wine, the time in cask varies. The casks are left in the crianza cellars of the Winery, making the corresponding decanting.

When the time we consider more adequate, the wine is bottled and stored in wine bottle racks in the “dormitory” cellar, where future crianzas and reservas await the moment to come out on the market to be enjoyed.

Casks

The seal of identity of our “Montegaredo” wines is the care in the ageing process in these casks, with the adequate lighting of the “dormitory” cellar. The wood gives the wine its own tannins and organoleptic values offering a more pleasant and round sensation in the mouth. It is also at this time, when that flavour and aroma of vanilla, chocolate, roasted, smoke, coffee… is acquired depending on the roasting of the wood that we select individually, taking into account the time that the wine will be in contact with the wood, so that It meets our purpose: the respect for the qualities of wine.
